Whey isolate is a protein of dairy origin, extracted from whey, a liquid phase obtained during the coagulation of milk in the cheese-making process. It can also be obtained by ceramic microfiltration, directly from the milk. The whey is then subjected to advanced membrane filtration processes (such as microfiltration or cold ultrafiltration), allowing the removal of almost all lactose, lipids and unwanted residues, while preserving the integrity of sensitive protein fractions (such as beta-lactoglobulin or alpha-lactalbumin).
