Nature and origin of maltodextrin

Maltodextrin is a complex carbohydrate derived from the transformation of starch, a molecule naturally present in plants such as corn, rice or potatoes. This process, called partial hydrolysis, consists of enzymatically cutting starch into shorter fragments of glucose chains. This produces a white, slightly sweet powder, composed of approximately 95% carbohydrates. Production continues by saccharification (controlled degradation of starch) then by spray drying ("spray-drying") to obtain a form readily soluble in water.

Appearing in the 1950s and 1960s in the food industry, maltodextrin gradually established itself in the field of sports nutrition, especially since the 1990s with the rise in popularity of sports drinks and energy gels. Today, it has become an essential ingredient for athletes looking for an efficient energy source, fast and well tolerated during exercise.
